Zucchini (courgette) features in this delicious hot salad. Fresh garden vegetables combine for a wonderful side dish or feature salad.
This dish grew out of my need to use up a lot of garden vegetables at once. I had a large garden and the zucchini and tomatoes would all come in at the same time and I struggled using them up. So I decided to combine them and created something that soon became a hit with the entire family. With all the fresh vegetables this is health plus – zucchini is healthier than you may think!
I show it here along with Rice and Orzo pilaf and roasted chicken.
- 2 medium (6″) zucchini, sliced thickly
- 2 tomatoes, sliced
- 1 medium onion, sliced
- 1 Tbl olive oil
- 1 Tbl butter
- 1 mushroom, sliced (optional)
- 1 tsp seasoned salt
- Parmesan cheese
Add oil to a pan over medium-high heat and melt the butter. Add the onions and sauté until the onions soften. Add the zucchini and continue to cook just until the zucchini starts to brown and soften. Add the tomatoes and seasonings (and mushrooms if being used) and toss to combine. Serve warm and top with shredded parmesan cheese.
Delicious with most mains or by itself. Especially nice with chicken or fish.
