Tasty ‘American Style’ mock sausage – my style

This ‘sausage’ I came up with takes me back home a little. I couldn’t find what I used to call Breakfast Sausage from America in New Zealand so I managed to come up with my own.

Since I couldn’t find the flavor I was used to in sausage after I moved to New Zealand I decided to do a little research and came up with seasonings that do the job for me. My wife agrees based on trips we took to the States that it reminds her of what we would get when we dined out for breakfast. And of course it’s economical.

 

  • 500g (1 lb) ground pork
  • 1 tsp fennel seed, slightly crushed in a mortar & pestle
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp cayenne pepper

Mix all together and store in a container in the fridge for at least 4 hours / overnight. Enjoy at breakfast in the morning.

Try this ratio of seasonings and then adjust to your taste. My only advice would be to be careful with the fennel. You want to know it’s there but fennel really takes over in a dish and it’s easy to make it so you can’t taste anything else. If you are not found of a little ‘burn’ then you can reduce the cayenne or eliminate it entirely but for me it’s a ‘must have’.

You could certainly use chicken if you wanted a pork free alternative.
